X/Y profiles are only displayed from the display window which can only show 1 or 3 bands of data. It will not display the profiles for all bands in the file. You could create a similar type plot by saving the displayed profiles from the Profile plot into a new, generic Plot window using Options ->New Window : With plots. Then load each band of data, create the x/y profile, and drag the new profile over into the new plot window.
